Reporting to the Regional General Manager, this position plans, organizes, directs, controls and evaluates the operation of the restaurant, deli, bars and multipurpose rooms.
Responsibilities include: applying management skills to ensure the service quality and financial goals of each Food & Beverage (F&B) department within the casinos are consistent and well maintained. Overseeing the operations of the casino event rooms, restaurant, bar and gaming floor work areas. Management of financial and material resources. Providing guidance and assistance to the Executive Chef, F&B Coordinator and F&B Supervisors. Human Resource management. Organizing and conducting staff training and ensuring correct procedures are being followed post-training. Ensuring that the Executive Chef, F&B Coordinator and F&B Supervisors adhere to correct procedures, conducting sporadic inspections, reviewing purchasing compliance, making sure all machinery and equipment are in good repair and daily shift briefings are being conducted. Utilizing a customer-focused approach to ensure that the service in the restaurant, event space and bars are carried out according to set standards. Organizing regional meetings and participating in corporate wide F&B meetings. Ensuring that correct disciplinary procedures are adhered to and assist in budgeting, forecasting and labour analysis.
